The Best Homemade Chicken Nuggets

I don’t know about you, but with three kids, two dogs, a hard working husbands schedule, hockey practice, Bible studies, and more – some nights mama needs a super simple and quick recipe. Enter the best homemade chicken nuggets.

These babies are packed with protein, only a few ingredients, and are my kids and husbands favorite.

Now, you might be thinking, “Nicole, I don’t have time to make chicken nuggets homemade when I can easily buy them from Costco.”

Girl, I feel ya. I won’t lie – we keep a bag (or two) of the Kirkland chicken nuggets in our freezer at all times. These are my absolute favorite for an easy weekday lunch for the kids and are my go-to when we have play dates with 20+ kids!

But, let me be honest with you. If this wasn’t super simple, I wouldn’t be sharing. If I can do it – so can you! At least give it a try. These will for sure be your new favorite.

The Search for the Best Recipe

I first found a rendition of this recipe from a blog post I can no longer locate. I was teaching a cooking class at a homeschool co-op a couple years ago and was desperately searching for a simple chicken nugget recipe suitable for 2nd – 3rd graders to recreate.

Most recipes had tons of spices, a complicated breading routine, and wanted me to deep fry. None of that was going to happen.

When I stumbled across this specific recipe, I knew we had a winner. This was the kids’ favorite thing they made all year! It was so good I tried it out at home for my own kids. They loved it just as much.

The best part is that it’s easy enough to let my own kids help with dinner. They feel empowered and I don’t lose much sanity or need to micro manage because it is THAT SIMPLE! (My kids are currently 7, 5, 3 for reference.)

Few Ingredients. Big Flavor

For authenticity’s sake, let me share that I had wanted to try to make my own homemade nuggets for awhile. Back in 2019, my daughter experienced a health scare that scared me into rethinking what we consumed daily – from vitamins and supplements to food and household products.

Once the veil of toxicity was lifted and I realized how much garbage is in everything we consume, I started to – little by little – make healthier and intentional swaps.

But chicken nuggets are like a staple for toddlers so I was weary – physically and mentally – to try something new.

I love that this recipe is so simple in ingredients. Other than the chicken itself, salt, spices, egg and breadcrumbs are all you need!

So, lets get to the recipe!

Ingredients

  • 1-2 lb Chicken Tenders (or Chicken Breasts to cut into nuggets)
  • 2 Tbsp. EVOO
  • 1 Tbsp. Salt
  • 2 Tbsp. Garlic Powder
  • 2 Tbsp. Paprika
  • 1/2 C. Flour
  • 3-4 Eggs
  • 1 Tbsp. Milk or Half & Half or Heavy Cream
  • 1 C. Panko breadcrumbs
  • 1 C. Italian Breadcrumbs

Directions

  1. Preheat oven to 425°
  2. Place chicken tenders (or cubed nugs) in a ziplock bag.
  3. Add in EVOO, salt, garlic powder, and paprika then give it a good shake to coat the chicken.
  4. Add in flour and shake that baby up until it’s nice and coated.
  5. In a small bowl add eggs and milk and whisk together.Ā 
  6. In a medium bowl add breadcrumbs.
  7. Open ziplock and (with a fork) take out one piece of chicken at a time and dip completely in egg wash, then coat in breadcrumbs.Ā 
  8. Place a cooling rack over a cookie sheet (I always put a piece of parchment on the cookie sheet (under the cooling rack)!Ā 
  9. Place each chicken on the rack (I usually have to do two batches).
  10. Bake for 20-25 minutes or until internal temp reads 165°F! 
  11. I can usually tell they’re done because they’re a nice golden brown!

Your New Favorite Snickerdoodle Recipe

Something about a snow day calls for a delicious recipe of freshly baked, warm cookies.

There’s something about freshly baked cookies that brings so much happiness and comfort, am I right?

Whether you’re a busy mom or a homemaker, baking cookies can be a great way to relax and destress.

Today, in Friday Favorites, I’m sharing a new recipe that will soon become your all-time favorite – Snickerdoodle Cookies. Not only are they easy to make, but they’re also delicious and perfect for sharing with your loved ones.

And if you want to switch things up a little bit, I’ll also show you how you can substitute the cinnamon sugar coating with chocolate chips to make your new favorite chocolate chip cookie recipe.

Let’s dive in.

A Made to Share Recipe

A few years ago I found this recipe book at Target around Christmastime. It caught my attention immediately because it was from Good Housekeeping. My MIL (whom I sadly never met) had a treasure trove of GH cookbooks for me to sift through as a newlywed.

This particular book, though small in binding, was power packed with delicious cookie recipes. The best part? It was a cookie swap cook book.

Every recipe in this book is measured and meant to share! I couldn’t believe it. This specific year, that is exactly what my friends and I decided to do for Christmas.

I thought this was amazing because who wants to do the math to double and triple recipes? Not this former hairstylist. I love to write. Not do math.

The Most Delicious Snickerdoodle Recipe Ever

I had always wanted to make Snickerdoodles but never actually did. Until I found the recipe.

I am not exaggerating when I say, to this day, these are my most requested cookies from friends and family and my own kids.

They are easy to make and almost easier to consume. Bonus – they’re gorgeous.

Perfectly round and crinkled and sparkling with sugar specks.

I have been making these for years now and have perfected my own twists and confections. I swapped white sugar for Sugar in the Raw and I omit the cream of tartar and baking soda for good old fashioned baking powder.

AND, I got crazy with the math and turned the sharable recipe into a perfectly portioned family size.

I won’t keep you waiting any longer. Let’s get to cookie making.

Ingredients

3 c. Flour
1 tbsp. Baking powder
1 c. Butter
1 1/3 c. Sugar in the Raw + 1/4 c. For top
2 Eggs
1 tsp. Vanilla
1.5 tsp. cinnamon for top

Directions

  1. Preheat oven to 375
  2. In mixer beat butter and sugar at medium speed until combined.
  3. Add in eggs and vanilla.
  4. Lower speed and add in flour and baking powder.
  5. Mix until combined and comes together.
  6. In a small bowl combine sugar and cinnamon.
  7. Shape dough into 1 inch balls and coat in sugar and cinnamon mixture.
  8. Place on cookie sheet and bake 10 min or until cookies are set and crinkled.

Cool on cookie rack for a few minutes & enjoy!

Change it to A Chocolate Chip Recipe

We JUST decided to get a little crazy today because my kids could not decide which cookie they wanted more; snickerdoodle or chocolate chip.

While I love baking, mama was NOT going to make two different cookie doughs. But, I must admit I was torn, too.

So, I decided to coat half of the dough in the cinnamon sugar mixture and mix in chocolate chips with the other half.

These turned out to be my FAVORITE chocolate chip cookies, and the consensus agreed. This is a big deal in our home. We have been a predominantly Magnolia Chocolate Chip fam.

If you want to try this out and get two cookies out of one recipe – look no further. After step 5 – add in 1 cup of chocolate chips (1/2 cup if you’re doing half snickerdoodle/half chocolate chip like we did).

That’s it. Easy peasy lemon squeezie.

How to Make Safe Homemade Play-dough

That kids will LOVE!

Back when the world was sheltering in place (whether we agreed with it or not), children and adults were growing restless.  As both a mom of little ones, and someone who struggles with anxiety and depression, I had been tirelessly searching for ways to keep my children entertained- and myself sane. 

Insert my unashamed Pinterest pitch; In the few hours that I don’t have three tiny humans clinging to me, asking for more snacks, or needing a butt to be wiped, you can find me exhaustively scrolling Pinterest for fun ideas and inspiration (home decor, fitness routines, cute tees, type 4 quotes, healthy recipes, essential oil combos, good books to read, pretty scripture quotes – just to name a few šŸ˜‰ ). Honestly, we probably make about 30% of what I pin.

So I was really excited when I found a homemade play dough recipe that I was able to (ever so slightly) tweak and make SAFE for both Andy (3 at the time) AND Emma (1 then).  

In the sea of homemade play dough made with baby oil or other potentially toxic ingredients, this particular recipe was made with real ingredients I already cook with – ensuring that even my little tubby could participate in this activity (don’t you just love the ā€œput everything in mouthā€ season).  

Now, almost two years later, the restlessness is in full swing as the weather anticipates the midwest’s shift in seasons.  This time I am also trying to keep the attention of three little minds, not two.

Having worked with some amazing special education therapists, I am well aware of the benefits of sensory play, so I decided to bring out and share this tried and true recipe.  

As winter break approaches, I thought this could be useful for the days when even the most calm kids get a little stir crazy, or need a boredom buster, or want to try a new science experiment for homeschool.  Whatever the reason, I promise your kids will love this.

NOTES

Before you jump to the recipe, I wanted to share a little bit about why and which essential oils we added into our playdough.

  • This makes the play-dough smell amazing 
  • Certain oils can aid in anxiety relief
  • Therapeutic benefits of sensory stimulation

Here are the oils we choose and why:

  1. Lavender: Lavender oil has been used and cherished for centuries for its unmistakable aroma and myriad benefits. In ancient times, the Egyptians and Romans used Lavender for bathing, relaxation, cooking, and as a perfume. Its calming and relaxing qualities, when taken internally, continue to be Lavender’s most notable attributes. Applied topically, Lavender oil is frequently used to reduce the appearance of skin imperfections. Add to bath water to soak away stress or apply to the temples and the back of the neck. Add a few drops of Lavender oil to pillows, bedding, or bottoms of feet to relax and prepare for a restful night’s sleep. Due to Lavender’s versatile properties, it is considered the must-have oil to have on hand at all times.
  2. Balance: The warm, woody aroma of doTERRA Balance Grounding Blend creates a refreshing environment. We perfectly blend Spruce, Ho Wood, Frankincense, Blue Tansy, and Blue Chamomile with Fractionated Coconut Oil to offer an enticing fragrance that creates a tranquil and relaxing atmosphere. REVIEW

This is not an exaggeration: my kids sat still for more than an hour as we played, formed, and created with our favorite activity.  We added colors to match our scents and enjoyed the therapeutic benefits of all the sensory stimulation we were getting! If you want to add non toxic, all natural food coloring, I suggest checking out these kitchen hacks.

One of my favorite aspects of making this is the shelf life!  The fun can continue for the next couple weeks!  We keep our play dough stored in an airtight container – preserving both the texture and sweet smells!! 

In conclusion, If you are looking for a way to calm the kids, have some fun, stimulate the senses, or relieve stress of your own (I don’t know who got more out of this  – me or the kids), then this is for you!

HOMEMADE PLAY-DOUGH INGREDIENTS

  • 1 C. Al Purpose Flour
  • 1/2 C. Salt
  • 2 TBSP. Cream of Tartar
  • 1 C. Water
  • 2 TBSP. Coconut Oil
  • natural dye
  • Essential oils (optional)
  • Gloves (optional for kneading in dye)

HOMEMADE PLAY-DOUGH DIRECTIONS

  1. Combine flour, salt, and cream of tartar in a saucepan.
  2. Slowly stir in water and oil.
  3. Cook on medium heat, stirring constantly, until the dough begins to thicken.
  4. Once the dough forms a ball, remove from heat.
  5. When the dough is cool enough to touch, take out of saucepan & knead until it’s smooth.
  6. Divide the dough into balls for how many colors you want to make.
  7. Add a few drops of your homemade natural dye to each ball. (You might want to use gloves to keep the dye from staining your skin.)
    NOTE: If you don’t have enough time to make your own, this is a good natural dye to use.
  8. Knead the dough again to mix in the color. (You might want to use gloves to keep the dye from staining your skin.)
  9. If desired, add a few drops of your favorite essential oils.
  10. Store the dough in an airtight container or bag to help it stay fresh.

But in a ā€œlife is messy, I am a mess, and yet my rebel heart is constantly being lavished with love and encouragement through my God and His peopleā€ kind of way.

This whole summer has been one giant trust fall. I’m learning what it really means to surrender my expectations—to make my plans but ultimately let the Lord lead the way.

If you knew me before the age of 24, then reading these words probably feels nothing short of crazy 🤪. But friends—the goodness of God is real. It’s available to everyone if you’ll just believe, receive, and continue to follow Jesus.

Has this journey been easy? Absolutely not. But it has been filled with growth, faithfulness, and answered prayers beyond what I could have ever asked for or imagined.

So yes—I’m thrilled to keep sharing my classroom’s transformation, because it represents so much more than dĆ©cor or bulletin boards. It’s a living picture of what the Lord can do when we simply trust Him.

P — Praise
Begin by worshiping God for who He is.

Confess where you’ve fallen short, and rest in His grace.

Bring your needs (and the needs of others) to Him.
šŸ’¬ ā€œGive me wisdom for the decisions ahead and peace in my waiting.ā€

Y — Yield
Surrender your plans to Him and listen for His leading.
šŸ’¬ ā€œI release my agenda. Align my heart with Yours.ā€

You can use P.R.A.Y. in the morning, in a journal, while doing dishes, or before bed—it’s less about the ā€œhowā€ and more about the ā€œWho.ā€

I still can’t believe I’m typing this…
This fall, I’ll be stepping into the classroom as a third grade teacher at Christian Liberty Academy!

Yes, I’m excited to teach. But what I’m really excited about is sharing what God has done to bring me here—because this story started over 10 years ago.

In 2013, I walked into CLA for a memorial honoring Mike’s brother. I was a brand-new believer, and something about the place just wrecked me in the best way.
I left in tears, whispering, ā€œI want to teach here.ā€

But I was a hairstylist with no plans for school. That dream felt wild and impossible.

Two years later, I applied to Moody Bible Institute. Not only was I accepted, but they took all my beauty school credits. A miracle.

Over the years, God kept weaving CLA into our lives—through friends, connections, and redemption stories I could’ve never planned.

When we enrolled Andy in kindergarten there, that same homecoming feeling returned. But with littles at home, we homeschooled for a few years.

Then last fall, God stirred our hearts again. I submitted my resume in faith… not knowing what job (if any) was available.

Fast forward: CLA called.
I thought it was for Bible class.
Instead… they offered me third grade.

It was more than I could’ve ever dreamed.
The moment I stepped into the classroom, I felt it deep in my bones—this is where I’m meant to be.

Only God could take a rebel-hearted hairstylist with nothing but questions…
and turn her into a teacher with a calling.

From salon chairs to classroom desks—He did it.
He planted me right where my heart first whispered, ā€œI want to be here.ā€

All glory to the One who does immeasurably more than we could ask or imagine.

Motherhood is such a contradiction. It will bring Motherhood is such a contradiction.

It will bring you to your knees in worship and in weariness.

It’s the greatest gift—and the greatest sacrifice.

A holy calling that asks for your whole heart, your whole self, and somehow, gives you even more in return.

Motherhood is late nights and early mornings.

It’s sticky kisses, tearful prayers, and deep, unspoken joys.

It’s the ache of pouring out—and the awe of being loved so fiercely by little hearts who see you as home.

To be a mama is to live in the tension:
of holding on and letting go, of losing yourself and somehow finding more of who God created you to be.

And today, while we honor the beauty and blessing of motherhood, we also hold space for the brokenhearted.

For the women who long for a child.
For those grieving a mama they can’t call today.
For those with strained relationships, losses, or longings.

You are seen. You are loved. You are not forgotten.

Happy Mother’s Day—to the weary, the wonder-filled, and the waiting.

May you feel the love of a God who sees it all and calls it holy.

Surrender your plans to Him and listen for His leading.

You can use P.R.A.Y. in the morning, in a journal, while doing dishes, or before bed—it’s less about the ā€œhowā€ and more about the ā€œWho.ā€

I still can’t believe I’m typing this…
This fall, I’ll be stepping into the classroom as a third grade teacher at Christian Liberty Academy!

Yes, I’m excited to teach. But what I’m really excited about is sharing what God has done to bring me here—because this story started over 10 years ago.

In 2013, I walked into CLA for a memorial honoring Mike’s brother. I was a brand-new believer, and something about the place just wrecked me in the best way.
I left in tears, whispering, ā€œI want to teach here.ā€

But I was a hairstylist with no plans for school. That dream felt wild and impossible.

Two years later, I applied to Moody Bible Institute. Not only was I accepted, but they took all my beauty school credits. A miracle.

Over the years, God kept weaving CLA into our lives—through friends, connections, and redemption stories I could’ve never planned.

When we enrolled Andy in kindergarten there, that same homecoming feeling returned. But with littles at home, we homeschooled for a few years.

Then last fall, God stirred our hearts again. I submitted my resume in faith… not knowing what job (if any) was available.

Fast forward: CLA called.
I thought it was for Bible class.
Instead… they offered me third grade.

It was more than I could’ve ever dreamed.
The moment I stepped into the classroom, I felt it deep in my bones—this is where I’m meant to be.

Only God could take a rebel-hearted hairstylist with nothing but questions…
and turn her into a teacher with a calling.

From salon chairs to classroom desks—He did it.
He planted me right where my heart first whispered, ā€œI want to be here.ā€

All glory to the One who does immeasurably more than we could ask or imagine.

Motherhood is such a contradiction. It will bring Motherhood is such a contradiction.

It will bring you to your knees in worship and in weariness.

It’s the greatest gift—and the greatest sacrifice.

A holy calling that asks for your whole heart, your whole self, and somehow, gives you even more in return.

Motherhood is late nights and early mornings.

It’s sticky kisses, tearful prayers, and deep, unspoken joys.

It’s the ache of pouring out—and the awe of being loved so fiercely by little hearts who see you as home.

To be a mama is to live in the tension:
of holding on and letting go, of losing yourself and somehow finding more of who God created you to be.

And today, while we honor the beauty and blessing of motherhood, we also hold space for the brokenhearted.

For the women who long for a child.
For those grieving a mama they can’t call today.
For those with strained relationships, losses, or longings.

You are seen. You are loved. You are not forgotten.

Happy Mother’s Day—to the weary, the wonder-filled, and the waiting.

May you feel the love of a God who sees it all and calls it holy.
